We hope that NOTCH brewery will provide customers a way to see the unique brewing processes and equipment we use - a traditional decoction brew-house, open and closed fermentation, horizontal lagering tanks, German gravity cask dispensing, and a draft system imported from the Czech Republic – tools, process and equipment that will allow a wide variety of session beer (and occasionally non-session beer) to be produced.

CZECH PIVO

Taste: Lemon, Malty Sweetness, Bread

Notes: Classic Czech pale lager, brewed with floor-malted Pils malt and Sterling hops. Double decoction, open fermentation, and extended lagering time bring a bit of Plzen to Brighton and Salem.

Czech dark Lager || 4.5% || 16.9 OZ. || 12° P

 

Taste: Sweet Dry Fruit, Toasted Dark Bread, Dry Finish

Notes:Tmavy is Czech for "Dark". Double -dedocted, open fermented naturally carbonated, lagered forever.

TENNER

Czech Pale Lager || 4.0% || 16.9 OZ. || 10° P
 

Taste: Lemon, Crispy, Black Pepper​

Notes: The most widely consumed beer style in the country that consumes the most beer in the world. Brewed with floor-malted Czech barley and Saaz hops. Triple decocted, open fermented, naturally carbonated, lagered forever.

GERMAN & AUSTRIAN BIER

SALEM LAGER
Bavarian Helles || 4.5% || 16.9 oz. 

 

Taste: Bright, Clean, Subtle Sweetness
Notes: A classic style from Munich, and what the Bavarians created after the Czech’s discovered Pilsner. Less hoppy than the Pilsner, Helles is malt driven and the flavor is clean and bright.

​HEFE WEISSE
Bavarian Wheat Bier || 5.2% || Weisse Glass

 

Taste: Clove, Banana, Full-bodied
Notes: Classic Bavarian wheat beer and one of the most technically challenging beers we make. Open fermented for maximum aroma and flavor, with clove and banana aromas formed from the unique Bavarian yeast.

AMBER KELLERBIER​

Zwickel / kellerbier  || 5.7% || 0.5L  || 9.5

Taste: Honey, Dark Bread, Spices

Notes: Bready malt and spicy hop aromatics, with a sweetness that finishes dry. Decoction mash, natural carbonation and extended lagering make this beer shine.

KÖLSCH
Cologne-style Kölsch || 4.5% || 0.5L  || 9.5

Taste: Bread, Fruit, Biscuit
Notes: Medium in body with a soft mouthfeel and a straw yellow or pale gold color, Kölsch has a spicy, herbal Noble hop bitterness that is medium to slightly assertive—less than a Pilsner, but not by much. A somewhat fruity or vinous (grape-y from malts) quality and a crisp, dryish finish make up the rest of the flavor profile.

Notes: Brewed with wheat & pils malt and only hopped with citra.

Taste: Citrus, Stone Fruit (Apricot & Peaches)
Notes: Celebrating the modest ABV of British IPA's, yet with the stone fruit aromas of US hop varieties, Left of the Dial uses British Malt, Hard water and a new wave hop profile

Taste: Citrus, Passionfruit, Melon

Notes: Fermented with our house Kolsch yeast at cooler temps than your average IPA, and a smooth , clean mouthfeel with a crisp bitterness. Brighter and cleaner than the ubiquitous New England IPA.
